2: Chef Rob’s Favorite Winter Soups

1. Classic Chicken & Wild Rice Soup

Ingredients:

  • 1 rotisserie chicken (shredded)
  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup wild rice, rinsed
  • 8 cups chicken stock
  • 1 bay leaf, 1 tsp dried thyme
  • 1 cup chopped kale or spinach
  • 1 cup half-and-half (optional)
  • Salt, pepper, juice of 1 lemon

Instructions:

  1. Sauté onion, carrots, celery in oil until soft. Add garlic, cook 1 min.
  2. Stir in wild rice, stock, bay, thyme. Simmer 35–40 min until rice is tender.
  3. Add chicken, greens, and half-and-half. Simmer 5 min. Season with salt, pepper, and lemon juice.

Chef’s Tip:
Use local Georgia greens and add a pinch of smoked paprika for extra flavor.


2. French Onion Soup with Gruyère

Ingredients:

  • 3 lbs yellow onions, thinly sliced
  • 2 tbsp butter, 2 tbsp olive oil
  • 1 tsp kosher salt, 1/2 tsp sugar
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 8 cups beef or veggie stock
  • 2 bay leaves, 4 sprigs thyme
  • 1 baguette, sliced
  • 2 cups Gruyère cheese, grated

Instructions:

  1. Caramelize onions in butter and oil with salt and sugar (40–50 min).
  2. Add garlic, deglaze with wine. Add stock, bay, thyme. Simmer 30–40 min.
  3. Toast baguette slices. Ladle soup into oven-safe bowls, top with toast and cheese, broil to melt.

Chef’s Tip:
Use a mix of yellow and Vidalia onions for depth.


3. Vegan Coconut Curry Lentil Soup

Ingredients:

  • 2 tbsp coconut oil
  • 1 onion, chopped
  • 1 tbsp ginger, grated
  • 2 garlic cloves, minced
  • 2 tbsp curry powder, 1 tsp cumin
  • 2 cups diced carrots/sweet potatoes
  • 1 cup red lentils, rinsed
  • 1 can coconut milk, 5 cups veg broth
  • 1 can diced tomatoes
  • 4 cups kale/spinach, juice of 1 lime
  • Salt, pepper, cilantro

Instructions:

  1. Sauté onion, ginger, garlic in coconut oil. Add spices, cook 1 min.
  2. Add veggies, lentils, coconut milk, broth, tomatoes. Simmer 20–25 min.
  3. Stir in greens, lime, salt, pepper. Garnish with cilantro.

3: Chef Rob’s Best Winter Stews

1. Slow-Cooked Beef & Sweet Potato Stew

Ingredients:

  • 2 lbs beef chuck, cubed, salt, pepper, 2 tbsp flour
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 sweet potatoes, cubed
  • 3 carrots, sliced
  • 2 cups chopped tomatoes
  • 4 cups beef broth
  • 2 bay leaves, 1 tsp rosemary
  • 1 tbsp Worcestershire
  • 2 cups kale/collards, parsley

Instructions:

  1. Season beef, toss with flour, brown in oil. Set aside.
  2. Sauté onion, garlic. Add veggies, tomatoes, broth, bay, rosemary, Worcestershire.
  3. Return beef, bring to boil, simmer covered 2 hrs. Stir in greens, cook 10 min. Garnish with parsley.

2. Chicken & White Bean Cassoulet

Ingredients:

  • 6 chicken thighs (bone-in, skin-on)
  • Salt, pepper, 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • 2 cans white beans, drained
  • 2 cups chicken stock
  • 1 cup diced tomatoes
  • 1 tbsp fresh thyme, 2 bay leaves
  • 1/2 cup panko breadcrumbs

Instructions:

  1. Season chicken, brown in oil. Set aside. Sauté onion, carrots, garlic.
  2. Add beans, stock, tomatoes, herbs. Return chicken, simmer 30 min.
  3. Top with panko breadcrumbs, broil until golden.

3. Vegetarian Mushroom & Barley Stew

Ingredients:

  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup pearl barley
  • 6 cups veggie broth
  • 1 bay leaf, 1 tsp thyme
  • 1 tbsp soy sauce
  • Salt, pepper, parsley

Instructions:

  1. Sauté mushrooms until browned. Add onion, carrots, celery, garlic.
  2. Stir in barley, broth, bay, thyme, soy sauce. Simmer 40 min. Season and finish with parsley.

4: Chef Rob’s Comfort Food Casseroles

1. Freezer-Friendly Lasagna

Ingredients:

  • 1 lb ground beef or plant-based crumbles
  • 1 onion, diced, 3 garlic cloves, minced
  • 2 jars marinara or 6 cups homemade sauce
  • 1 box lasagna noodles
  • 1 container ricotta, 1 egg
  • 2 cups mozzarella, 1 cup Parmesan

Instructions:

  1. Sauté onion, garlic, beef. Add marinara, simmer 10 min.
  2. Mix ricotta, egg, half the Parmesan.
  3. Layer sauce, noodles, ricotta, mozzarella. Repeat 3–4 layers, top with sauce and cheese.
  4. Bake 30 min covered, 15–20 min uncovered at 375°F. Cool, slice, and freeze.

2. Chicken & Broccoli Rice Bake

Ingredients:

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 can cream of mushroom soup or 1 cup béchamel
  • 1 cup cheddar cheese, 1/2 cup milk
  • Salt, pepper, 1/2 cup panko

Instructions:

  1. Mix rice, chicken, broccoli, soup, cheese, milk, salt, pepper.
  2. Spread in baking dish, top with panko.
  3. Bake at 375°F for 25–30 min until bubbly.

3. Vegetarian Sweet Potato & Black Bean Enchilada Bake

Ingredients:

  • 2 sweet potatoes, roasted and cubed
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 2 cups enchilada sauce
  • 8 corn tortillas, cut in quarters
  • 1 cup shredded cheese (optional)
  • 1 tsp cumin, 1/2 tsp chili powder

Instructions:

  1. Layer sweet potatoes, beans, corn, tortillas, sauce, and cheese in baking dish. Repeat layers.
  2. Bake at 375°F for 25 min.
