Method
1. Prepare Broth: In a large pot, char the onion and ginger until slightly burnt. Add beef bones, water, star anise, cinnamon, coriander, and fish sauce. Bring to a boil, then reduce heat and simmer for 2-3 hours.
2. Strain: Remove the bones and spices, and strain the broth through a fine sieve. Adjust seasoning with salt and more fish sauce if needed.
3. Cook Noodles: Prepare the rice noodles according to package instructions, then drain.
4. Assemble Bowls: In bowls, place cooked noodles, raw sliced beef, and pour hot broth over the top. The heat will cook the meat.

Method
