- 2 lbs beef bones (for broth)
- 1 onion, halved

- 8 cups water

- 1 tsp coriander seeds
- 1 tbsp fish sauce
- 1 lb rice noodles (bánh phở)

Method
1. Prepare Broth: In a large pot, char the onion and ginger until slightly burnt. Add beef bones, water, star anise, cinnamon, coriander, and fish sauce. Bring to a boil, then reduce heat and simmer for 2-3 hours.
