Chef Rob’s Holiday Brunches: Make-Ahead Recipes for a Crowd

Introduction: The Joy of Holiday Brunch in Atlanta

When the holidays roll around, Atlanta comes alive with festive lights, cool mornings, and the promise of togetherness. While most people think of elaborate dinners and cocktail parties, some of my favorite memories as a chef—and as a guest—are built around a holiday brunch table. There’s something magical about gathering on a crisp December morning, the smell of coffee and cinnamon in the air, and a spread of comforting, chef-driven dishes that invite everyone to linger and savor.

Whether you’re hosting Christmas morning for family in Alpharetta, a Hanukkah brunch for friends in Midtown, or a New Year’s Day gathering in Blue Ridge, a well-planned brunch is the ultimate way to bring people together. And with the right make-ahead recipes and chef secrets, you can actually enjoy the morning with your guests instead of being stuck in the kitchen.

In this post, I’ll share my favorite crowd-pleasing brunch recipes, from overnight cinnamon rolls to savory frittatas and elegant fruit salads. Plus, you’ll get my pro tips for prepping ahead, building a balanced menu, and setting a festive, welcoming table—Atlanta style.

Section 1: Why Brunch Is the Ultimate Holiday Meal

1. Flexible Timing

Brunch lets you gather at a time that works for everyone—late risers, early birds, and overnight guests alike. It’s perfect for Christmas morning, New Year’s Day, or any weekend during the busy season.

2. Crowd-Pleasing Variety

A great brunch menu includes something for everyone: sweet, savory, hearty, and light. Vegetarian, gluten-free, and dairy-free options are easy to include.

3. Make-Ahead Magic

Most brunch favorites can be prepped the night before and either baked off or assembled in the morning, leaving you free to enjoy the party.

4. Atlanta’s Local Bounty

Winter in Georgia means juicy citrus, sweet potatoes, farm-fresh eggs, and pecans—perfect for elevating classic brunch recipes.

Section 3: Recipe 1 – Overnight Cinnamon Rolls

These rolls are the star of any holiday brunch—soft, gooey, and loaded with cinnamon. Prep them the night before, then bake fresh in the morning.

Ingredients (Makes 12 Rolls)

Dough:

  • 1 cup whole milk, warmed
  • 1/2 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 2 large eggs, room temp
  • 1/3 cup unsalted butter, melted
  • 4 1/2 cups all-purpose flour
  • 1 tsp salt

Filling:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 tbsp ground cinnamon

Icing:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1–1.5 cups powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 2–3 tbsp milk

Instructions

  1. Make the Dough:
    • In a large bowl, combine warm milk, sugar, and yeast. Let sit until foamy (5 min).
    • Add eggs, melted butter, and salt. Mix in flour gradually to form a soft dough.
    • Knead 8–10 min until smooth. Place in a greased bowl, cover, and let rise until doubled (1–2 hours).
  2. Shape the Rolls:
    • Roll dough into a 16×12-inch rectangle. Spread with softened butter, sprinkle with brown sugar and cinnamon.
    • Roll up tightly from the long side, slice into 12 rolls. Place in a greased 9×13-inch pan.
  3. Overnight Rest:
    • Cover tightly and refrigerate overnight.
  4. Bake:
    • Remove from fridge and let rise 30–45 min. Bake at 350°F for 25–30 minutes until golden.
  5. Make the Icing:
    • Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, salt, and milk. Spread over warm rolls.

Chef’s Tip: Add chopped Georgia pecans or raisins to the filling for a Southern twist!

Section 4: Recipe 2 – Spinach & Roasted Red Pepper Frittata

A frittata is the ultimate make-ahead brunch dish—delicious hot, warm, or at room temp, and infinitely adaptable.

Ingredients (Serves 8)

  • 10 large eggs
  • 1/2 cup whole milk or cream
  • 1 cup shredded sharp cheddar or feta
  • 2 cups fresh spinach, roughly chopped
  • 1 cup roasted red peppers, chopped
  • 1/2 small red onion, diced
  • 2 tbsp olive oil
  • Salt and pepper
  • 2 tbsp fresh herbs (parsley, chives, or dill, optional)

Instructions

  1. Prep the Veggies:
    • Sauté onion in olive oil until soft. Add spinach, cook until wilted. Stir in roasted peppers.
  2. Mix the Eggs:
    • In a bowl, whisk eggs, milk, cheese, salt, pepper, and herbs.
  3. Combine & Bake:
    • Add veggies to a greased 9×13-inch baking dish or ovenproof skillet. Pour egg mixture over top.
  4. Bake:
    • 375°F for 25–30 minutes, until set and slightly golden. Cool slightly, slice, and serve.

Chef’s Tip: Frittata can be made a day ahead and reheated gently. Swap in mushrooms, sun-dried tomatoes, or cooked sausage as desired.

  • Decorate with fresh greenery, citrus, or flowers from Atlanta’s markets.
  • Play a holiday playlist or local jazz to set the mood.

Section 6: Entertaining Atlanta-Style—Brunch Stories & Ideas

Some of my favorite chef events have been holiday brunches. At a Christmas morning gathering in Johns Creek, we served cinnamon rolls, frittata, and a smoked salmon platter. The family lingered for hours, sipping coffee and telling stories as kids played with new toys.

At a New Year’s brunch in Midtown, a group of friends wanted a “make-your-own brunch board.” We set out roasted veggies, bagels, cheeses, and spreads—everyone built their own plate, and the host got to relax and enjoy.

Brunch is about ease, abundance, and connection—perfect for Atlanta’s laid-back, welcoming spirit.
